I’m always looking for a breakfast dish I can prepare ahead of time and just pop in the oven, either when I’m having guests or to prepare a special weekend breakfast for the family. Then, I can leave it out on the counter and they can enjoy whenever they decide to get out of bed! This egg and sausage casserole certainly checks all the boxes.
Feel free to add other vegetables to the mix, such as peppers or tomatoes and while I made mine with vegetarian sausage, I suppose you can use the real thing if you must! Set out some fresh fruit, fresh bread with butter and jam, and some juice and you will be sure to please! Oh, did I say we’ve enjoyed it for dinner, too…
