Gazpacho Soup Recipe

An easy, delicious, and healthy gazpacho soup.

Ingredients

  • 2 cloves garlic
  • 1 large onion
  • 1-2 cucumbers 1 English or two smaller
  • 4-5 to matoes
  • 1 green pepper
  • 1/2 teaspoon salt
  • 1/2 cup vinegar - I use red white, or champagne.
  • 1/4 cup olive oil but you can omit.
  • 3 cups tomato juice

Instructions

  1. Wash your veggies.
  2. Use your food processor and purée each ingredient. The garlic and onion can be done together.how to make an easy gazpacho. Set aside a small amount of veggies to be chopped for toppings.
  3. Once each is done, pour into a big bowl to combine.
  4. Add the salt, vinegar, and tomato juice and mix.what are the ingredients for easy gazpacho.
  5. Place in the refrigerator to rest for at least two hours, until you are ready to serve.
  6. Serve topped with chopped veggies and cilantro.
