Easy and Delicious Ravioli Recipe

By keeping a few essentials in the freezer like ravioli and pre-cooked sausage, you can make this quick, easy, and delicious ravioli recipe. It's perfect for when you want flavor, but not the fuss.

Ingredients

  • Two tbsp olive oil
  • One medium onion sliced thin
  • One small red pepper sliced thin and halved
  • Two garlic cloves diced
  • One bunch rainbow swiss chard washed well and cut in about one inch squares including stems
  • One cup broth beef or vegetable
  • 1/2 cup white wine Remember the alcohol cooks out so the kids can eat this - wine is just for flavor - if you prefer you can buy cooking wine at the market.
  • 1/2 cup water
  • One tbsp oregano
  • One tbsp basil
  • Salt and pepper to taste
  • One package 12-16 ounces fully cooked sausage (We use Niman Ranch sweet Italian, but you can use what you like).
  • Two packages 4 servings total Ravioli of your choice (We used Rising Moon organic spinach & cheese)
  • Fresh grated parmesan cheese to top

Instructions

  1. Cook ravioli according to package instructions.
  2. In the large pan, heat the olive oil over a medium-high heat.
  3. Add the onions and sprinkle with a pinch of salt and sauce.
  4. When the onions start to get soft, add the red pepper and garlic and saute.
  5. After 3-4 minutes, add broth, wine, water, oregano and basil.
  6. After another 3-4 minutes, add the rainbow swiss chard and sausage, stir in, and cover.
  7. Leave covered about 4 minutes until the swiss chard begins to wilt and then stir and cook uncovered another 4 minutes.
  8. You can also add heat if you like by adding red pepper flakes, but the natural flavors of the ingredients are delicious.
  9. To serve, place about 6 ravioli on a lipped pasta plate or shallow bowl, spoon the swiss chard sauce over the top, and sprinkle with freshly grated parmesan cheese.
  10. You can serve with a side salad like an arugula, burrata, and tomato with balsamic drizzle. Enjoy!

Recipe Notes

You will need a large pan with a lid and a pot to cook the ravioli.

To make this dish vegetarian, substitute a can of white beans in place of the sausage and use vegetable broth. If using beans, be sure to rinse well before adding when you would have added the sausage.
