A versatile oatmeal cookies recipe that you can dress up or down and is perfect for any occasion when you add your choice of mix-ins.
Preheat oven to 375
Cream butter, sugar, and brown sugar in mixer
Add eggs and vanilla
In a small bow, combine flour, baking soda, salt, and cinammon
Slowly add in the oats
Evenly divide the dough in the number of bowls of mix-ins you want. Examples: 1/2 cup chocolate chips, 1/4 cup dried coconut and 1/4 cup ginger crystals or 1/2 cup white chocolate chips and 1/4 cup pistachios
Add 1/4 of the dough to each of the bowls and mix in
Line a cookie sheet with parchment paper and drop a tsp of cookie mix for each cookie. Lightly press down on each cookie with a wet fork.
Bake for 8-10 minutes
Let cool for 3 minutes and dip top in powdered sugar
