Mashed Potato Bread

Mashed Potato Bread

An easy, scrumptious bread that goes well in a sandwich, as toast, or just all on it's own.

Ingredients

  • 1 1/2 cup well-seasoned mashed potatoes - leftovers work great
  • 3 1/2 cup all purpose or bread flour- more or less to achieve a smooth, soft dough
  • 3 3/8 tsp yeast mixed with 3 tbsp very warm water and 1 tsp sugar mixed together to activate yeast
  • 3 tbsp sugar
  • 1 tsp salt
  • 3/8 cup warm milk
  • 3 tbsp melted and cooled unsalted butter
  • Egg wash - 1 whole egg beaten well with 1 tbsp water

Instructions

  1. Mix all ingredients except flour.
  2. Add flour a little at a time to achieve desired dough.
  3. Kneed with dough hook or on a floured board for about 10 minutes.
  4. Place back in bowl, cover with saran, and let rise in warm place about an hour or until doubled in size.
  5. Grease bread pans and roll dough into two loaves to fit pans.
  6. Cover again with saran and place in warm place and let rise until bread is above top of pan about 1”.
  7. Paint with egg wash and slash with knife on a diagonal down the middle.
  8. Bake at 350 for 30-40 minutes until golden.

Preheat oven to 350.
