My husband decided to start eating scallops again after not wanting them for a long time. He had them at a party and decided they were worth another try. When I was single and ate fish, many many years ago, these were kind of my “go to” fancy dinner menu as they looked and tasted great, but most importantly for me at the time, were super easy to fix. I just put them in a oven proof dish, added some garlic butter and seasonings, and broiled.
This time around, however, I decided to get a bit more adventurous and healthy. But, of course, it still meant they had to be delicious, look nice, and be easy to make. This time of the year is so perfect to make this grilled scallops with quinoa bowl as you can get just picked, local vegetables to add to the quinoa.
I’ve really gotten into the concept of bowls and the simplicity in eating they achieve, not to mention saving on washing dishes. One condition that’s important in my household is that the recipe can be adapted for me, the vegetarian, so I’m not cooking multiple dishes. This recipe was able to make both of us very happy…
