I recently spent some time escaping the winter in Palm Desert and came across a new favorite restaurant, Wilma & Frienda. While the focus is on comfort food with a twist – favorite childhood dishes with a grownup angle to them, they are really known for their pastries. And evidently, best known for their Key Lime Tart which I am happy to share with you.
I actually went home and baked the tart just to make sure it could be easily done and was delicious… and it was!
Wilma & Frieda’s Key Lime Tart Recipe
You will need a 10″ tart pan with a removable bottom.
Serves 10
Ingredients
Crust
- 1-3/4 cups graham cracker crumbs
- ½ cup butter, melted
- ¼ cup sugar
- ¼ tsp salt
Filling
- 3 ounces egg yolks (approximately 8 yolks)
- ½ cup Key Lime juice
- 1 T. lime zest
- 1 (14 ounce) can sweetened condensed milk
- 2 T. fresh lemon juice (optional)
- Whipped cream and lime zest for garnish
Instructions
Crust
- Combine graham cracker crumbs, butter, sugar, and salt in a bowl.
- Mix well and press firmly into the bottom of a 10-inch tart pan with a removable bottom.
- Bake crust in a 350 degree oven for 10-15 minutes.
Filling
- While crust is baking prepare filling.
- Whisk together egg yolks, lime juice, lime zest, and sweetened condensed milk in a large bowl. NOTE: if using regular lime juice instead of key lime juice, add lemon juice.
- Whisk until smooth.
- Pour into baked crust.
Finish
- Bake in 350 degree oven for 19-25 minutes.
- Center of filling should be set and jiggle a little.
- Chill tart.
- Serve with a side of sweetened vanilla whipped cream or top the tart with dollops of whipped cream.
- Use zest from one lime to decorate the whipped cream.
