We love some good yummy beef, veggie or chicken burrito bowls. They’re the perfect mix of healthy and delicious. And they are so quick and easy to make. I like to pull out this recipe when I don’t have a lot of time but still want to put a satisfying dinner on the table. 

This recipe is perfect for when you’re craving something spicy. The chicken is perfectly seasoned and the rice is full of flavor. Plus, the toppings add a nice crunch. Of course, you can always adjust the recipe to your own level of spiciness. Want more heat? Go for it!

Almost everyone loves a good burrito. And when you make them into bowls, they’re even easier to eat and just as delicious. 

Burrito bowls are extremely customizable. You can easily swap out the chicken for ground turkey or beef or for a vegetarian option, use tofu. The possibilities are endless!

How to Make a Spicy Chicken Burrito Bowl

INGREDIENTS:

  • 2 cups of white rice, cooked
  • 1 rotisserie chicken
  • 16 oz salsa 
  • 1 onion
  • 1-2 cloves garlic, minced
  • ½ Tablespoon salt
  • ½ Tablespoon pepper
  • ½ Tablespoon cumin
  • ½ Tablespoon chili powder 
  • 1 head of romaine lettuce
  • 2 cups black beans
  • 1 avocado, sliced
  • 1 cup sour cream
  • Lime wedges and cilantro for garnish

INSTRUCTIONS:

 1. Start by making your rice according to package instructions either in your rice cooker or on the stovetop.

2. While the rice is cooking, start removing the skin and shred the rotisserie chicken.

3. Dice one onion and mince the garlic cloves.

4. In a large pot, heat one tablespoon of oil on medium heat, and then saute onions and garlic until fragrant and the onion is slightly translucent.

5. Add the shredded rotisserie chicken, salsa, seasonings, and water (or broth). Bring to a boil and then put the lid on and change the heat to low. 

6. Cook for 20 minutes, stirring and adding more water as needed.

7. Wash and prep the vegetable toppings. Chop the romaine into strips, slice the avocado, cut lime into wedges, and roughly chop the cilantro.

Once the chicken is cooked, do a taste test to see if it needs more seasoning. The liquids may have evaporated so if you want it saucier, add ¼ cup more liquid.

8. Begin assembling the bowls. Add the rice, chicken, lettuce, and top with sour cream. Serve with lime, cilantro, and avocado slices.
