Is it even fall if you don’t make a loaf of Pumpkin Bread? This is our go-to pumpkin bread recipe that we make quite often, every fall from September to Thanksgiving it seems!
It’s like comfort food to us! With real ingredients like pumpkin and warm spices like cinnamon, nutmeg and cloves, you are going to want to keep a loaf of Pumpkin Bread nearby.
The wonderful thing about pumpkin is that it adds so much moisture to recipes! You can choose to use a can of pumpkin or if you’d like, to roast your pumpkin. This is a wonderful way to use your harvest if you have a garden like me. Sometimes, we like to add in chocolate chips or chopped nuts to our loaf as well.
This go-to pumpkin bread recipe can be made in just one bowl for easy clean up and no fancy equipment is needed. You may find that you have some leftover pumpkin when you are done with this recipe. You can use the leftovers to make some Pumpkin Dog Treats for your best furry pal.
Let’s get to making your go-to Pumpkin Bread
You will need:
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp pumpkin pie spice
1/2 c. (1 stick) butter, melted
1/2 c. granulated sugar
1 c. pumpkin puree
1/4 c. Plain greek yogurt
2 large eggs
1 tsp. pure vanilla extract
1 cup chocolate chips or walnuts (optional)
Directions:
Preheat your oven to 350 degrees.
Grease a loaf pan with non-stick spray and line it with parchment paper.
In a large bowl, mix together flour, pumpkin pie spice, baking powder, salt.
Mix in butter, sugar, yogurt, vanilla and eggs (and chips and/or walnuts if using). Fold in the pumpkin.
Mix until combined.
Pour your pumpkin bread batter into your prepared loaf pan.
Bake about 45-50 minutes or until a toothpick comes out clean from the center of the loaf.
Cool for about 10-15 minutes on a cooling rack before removing from the pan.
You may store the bread for about 1 week in an airtight container or ziplock bag.
