Sheet pan tacos are the perfect meal for a crowd. It’s a super easy dish to make and it is delicious! Sheet pan cooking is one of our favorite ways to make any night a breeze and these sheet pan tacos are a great way to upgrade your Taco Tuesday.

 5 Tips For Making Awesome Sheet Pan Tacos

 1. Keep it fresh.


While I tend to like garden-fresh ingredients in most of my dishes, this one is particularly tasty with homegrown herbs and veggies. By keeping your ingredients simple and fresh you can have a delicious affordable dinner in a snap. If you have access to fresh, ripe cilantro, limes, and/or avocados, they will make this recipe sing!

2. Line the sheet pan with foil.

I often line the sheet pan with foil or parchment paper just to make clean up easy.  I particularly love sheet pan recipes like these when staying in a rental home. Of course, you want clean-up to be easy and quick. Also, using foil means you don’t need to worry about using someone else’s sheet pan.

3. Try cooking this recipe over a campfire.

This recipe can also be adapted to be cooked over the campfire or grill. Simply create individualized foil pouches with all the ingredients in them. Then, lay it on a grate over an open fire or use long tongs to heat the packets over the grill or fire pit. 

4. Make it your own.

Not a fan of shrimp? Or maybe you want a more affordable dinner option? Go ahead and switch it up. You can make this recipe with chicken, turkey, strip steak, or tofu. If you have some leftover protein from last night’s dinner, this is a great “second day” recipe. 

You can also take advantage of the fresh produce you have in your garden (or local grocery store). Add some chopped tomatoes, basil, thyme or whatever you have easy access to.. Go ahead and get creative. One of the best things about this sheet pan tacos recipe is that you can totally make it your own. 

5. Make this as big (or small) as you need.

While I adore making this recipe for my guests at Sugar Water Manor or when my kids and their friends come to visit, it also works just for David and me. It is all about the size of your pan! Again, make it your own! You can easily halve the ingredients for a smaller batch. Though in my opinion, you are going to be sad you don’t have any leftovers.

Sheet Pan Tacos with Cilantro Lime 

(Yield 6 tacos) Prep time 30 minutes. Cook time 10 minutes  

Ingredients

Filling:

  • 12 oz of raw shrimp, peeled 
  • 6 tortillas  
  • 1 cup of cilantro  
  • 1/2 purple onion
  • 1/2 Hass avocado  
  • 4 limes
  • 1/2 cup of shredded cabbage  2 tablespoons of minced garlic 
  • 2 tablespoons of olive oil  

Sauce:  

  • 1/2 cup of mayonnaise  
  • 1 teaspoon of salt
  • 1 teaspoon of garlic powder  
  • 1 tablespoon (or to taste) of hot sauce

Instructions:

In a bowl, add the juice of 3 limes, minced garlic, 1/4 cup of cilantro chopped, cumin, and 1 tablespoon of oil.

Add shrimp to the above marinade. Stir. Place in the refrigerator for 30 minutes.

In another bowl, mix the mayonnaise, salt, garlic powder, cumin and hot sauce. Set aside.

To make the coleslaw, add cabbage, thinly sliced onion, 1/2 cup of chopped cilantro, and juice of one lime. Set aside.

Place shrimp and the marinade on a baking sheet and bake at 350 degrees for 10 minutes.

To assemble tacos, place the coleslaw on the tortillas, then add 4-6 pieces of shrimp. Then, top the dish with sauce and cilantro for garnish.
