What is Chowder?
Chowder is a soup that can be made with several different ingredients.
It varies greatly depending on what part of the United States or Canada you’re in, but it commonly shares some similar characteristics across borders: A chowder’s broth has milk or cream added to make it more rich and flavorful; seafood like shrimp, clams, scallops are usually used as well as potatoes for thickness.
It was created during The Great Depression when people were struggling to get by so they needed something easy to make from scraps that wouldn’t cost much money.
Nowadays chowder has been adapted for different cultures with each recipe varying slightly depending on the ingredients available or what tastes best at home!
How to Make Salmon Chowder
Ingredients:
2-3 tablespoons olive oil or butter
1 onion, diced
1 small fennel bulb, diced
1 cup celery, diced
2-4 garlic cloves, minced
1 teaspoon fennel seeds
½ teaspoon thyme
½ ts smoked paprika
⅓ cup white wine
3 cups chicken broth
¾ lb baby red potatoes, sliced thin
Salt & pepper to taste
1 bay leaf
1 lb salmon, cooked and flaked, no skin/bones
1 cup heavy cream
Preparation Instructions:
Line a baking sheet with foil and preheat your oven to 350 degrees. Lay your salmon, skin side down, on the foil.
Season the salmon with salt and pepper.
Bake the salmon for 15 minutes, until it is pink and easily flakes with a fork.
While the salmon is baking, prep your vegetables.
In a pot over medium heat saute onion, fennel bulb, and celery in olive oil or butter.
Add garlic, thyme, fennel seeds, and paprika
Stir in wine, broth, and add bay leaf
Bring to a simmer over high heat and add potatoes
Reduce heat to medium low until potatoes are tender
Add cream then salmon and remove from heat
Season with salt & pepper to taste, garnish with lemon and fennel fronds
