Do you ever crave a simple and refreshing summer meal, because it’s just too hot out to cook? Are you too busy enjoying outside activities to fix dinner? Or, do you just feel like kicking back, grabbing a light meal, and enjoying the family while dining al fresco? Whatever your reason, check out this Buckwheat Noodles and Cucumber Salad – one of the regulars on my summer meal rotation. It is quick, delicious, and versatile – just add a protein source of your choosing or any other veggies that you like!
I to use this Buckwheat Noodles and Cucumber Salad as a main dish or as a side with grilled salmon. When I want to go meatless, I add extra firm tofu that has been marinating in the same dressing you use to toss with the noodles. It’s so great either way, you can’t go wrong. Enjoy!
