I am just loving the instant pot these days. With crazy days, it is great to have a simple solution to dinner without worrying about take out and compromising on having delicious real food. The instant pot has been a lifesaver in the kitchen. You can literally get a wholesome dinner on the table in less than 30 minutes. This instant pot turkey recipe is a perfect example.
First, let’s talk about these ingredients, as they are not ones we often think of eating.
What is turmeric?
Turmeric is a beautiful flowering plant and the root is used in cooking. We most often find turmeric dried ground in the spice aisle. But like ginger, you can often find fresh in the produce section and you can grate yourself.
What is the flavor of turmeric?
It truly has its own wonderful flavor, especially when added to dishes. Turmeric is earthy in flavor with a little bit of pepper taste. And the color is incredible when adding to food.
What are the benefits of turmeric?
There are proven benefits of turmeric, including being a very good anti-inflammatory. In addition, people believe it improves symptoms of depression and arthritis.
Why turkey not chicken?
No reason. They are both high in protein. We just like to switch things up here.
What is a coco amino?
It is a yummy salty seasoning liquid that is made from fermented sap of the coconut palm. Sea salt is also added. Being the coconut palm, it has a sugary taste as well. It is a delicious and healthy replacement for soy sauce.
How to use coco aminos?
Coco aminos can be used to replace soy sauce and you can use a 1:1 ratio. It is a fabulous flavor enhancer!
Here’s how I came to love my instant pot…
Everyone I know and follow rave about their instant pots. But, trust me, I was not sold on getting one at first. I thought it was just another gadget and something else to take up counter space. Ugh. But two issues changed my mind.
Dinner is a precious time and I don’t always want to spend it in the kitchen cooking. Having time some nights for the family is the priority. Having an instant pot let’s me forget about having to cook dinner and let’s me get it on the table fast.
In addition, our geo-thermal was getting installed and I had no A/C for weeks. I needed a way to cook without having to turn on the oven…instant pot to the rescue. I was hooked.
If you do not have an instant pot, I highly suggest you get one. I have the Ninja and just love it!
How to Make Instant Pot Turkey Turmeric Stir Fry
Serves: 4 Prep: 10 minutes Cook: 20 Minutes
Ingredients
4 turkey cutlets or 1 turkey breast (cut into cubes)
1 head of broccoli diced
1 bag of sugar snap peas
1 1/2 cups matchstick carrots
1 white onion, halved and sliced into rounds
1/3 cup coco aminos
2 teaspoon turmeric
1 teaspoon black pepper
1 tablespoon cornstarch
Directions
Place diced turkey into the instant pot along with one cup of water. Place lid on instant pot. Set valve to sealed position and set on manual or pressure cook for 15 minutes. Once the instant pot stops counting, release pressure.
Remove lid and turn off. Turn on saute mode. Mix together turmeric, coco aminos, pepper, and cornstarch. Whisk well and pour to top of turkey.
Stir until the sauce thickens. Once it thickens, add in broccoli, peas, onions, and carrots.
Place lid on top of the pot, but do not seal. Let steam like this, stirring every few minutes until vegetables are to your desired tenderness.
