How to Make a Spicy Chicken Burrito Bowl
INGREDIENTS:
- 2 cups of white rice, cooked
- 1 rotisserie chicken
- 16 oz salsa
- 1 onion
- 1-2 cloves garlic, minced
- ½ Tablespoon salt
- ½ Tablespoon pepper
- ½ Tablespoon cumin
- ½ Tablespoon chili powder
- 1 head of romaine lettuce
- 2 cups black beans
- 1 avocado, sliced
- 1 cup sour cream
- Lime wedges and cilantro for garnish
INSTRUCTIONS:
1. Start by making your rice according to package instructions either in your rice cooker or on the stovetop.
2. While the rice is cooking, start removing the skin and shred the rotisserie chicken.
3. Dice one onion and mince the garlic cloves.
4. In a large pot, heat one tablespoon of oil on medium heat, and then saute onions and garlic until fragrant and the onion is slightly translucent.
5. Add the shredded rotisserie chicken, salsa, seasonings, and water (or broth). Bring to a boil and then put the lid on and change the heat to low.
6. Cook for 20 minutes, stirring and adding more water as needed.
7. Wash and prep the vegetable toppings. Chop the romaine into strips, slice the avocado, cut lime into wedges, and roughly chop the cilantro.
Once the chicken is cooked, do a taste test to see if it needs more seasoning. The liquids may have evaporated so if you want it saucier, add ¼ cup more liquid.
8. Begin assembling the bowls. Add the rice, chicken, lettuce, and top with sour cream. Serve with lime, cilantro, and avocado slices.
